Sweet & Sour Chicken
This Sweet & Sour Chicken recipe uses the same sauce as Sweet & Sour Pork. I prefer Sweet & Sour Chicken as chicken gives a more tender texture than pork.

INGREDIENTS
3 chicken thighs (cut into cubes)
1 garlic clove (mince)
1 cup pineapple cubes
1/2 red pepper
2 slices sun dried tomato (slice thinly)
MARINADE FOR CHICKEN:
- 1 tsp sesame oil
- 1/2 tsp salt
- 1/2 tsp sugar
- 1 egg
3 Tbsp cornflour
2 Tbsp oil for deep frying the chicken
SAUCE INGREDIENTS:
- 1 tsp soya sauce
- 1/2 tsp dark soya sauce
- 2 tsp sugar
- 1 Tbsp tomato ketchup
- 1 Tbsp chilli sauce
- Dash of white pepper
- 1/2 cup of water
Thickener: 1 Tbsp cornflour (mix with 2 Tbsp of water)
METHOD
1. Prepare the sweet & sour sauce by combining all the sauce ingredients. Stir well. Set aside.
2. Marinade the chicken cubes for 15 minutes. Just before frying, coat the chicken with cornflour.
3. Put some oil into a saucepan and fry the chicken meat till golden brown. Remove to a serving plate.
4. Fry garlic until fragrant.
5. Add pineapple, red pepper and sun dried tomato. Stir fry for a couple of minutes.
6. Add the prepared sauce and bring it to a boil. Simmer for a few minutes.
7. Add the fried chicken and stir to coat chicken with the sauce.
8. Thicken with cornflour mixture. Remove to a serving plate.
