Fried Rice Noddles (with Cha Siew in Hot Black Bean Sauce)
The Fried Rice Noodles are so tasty having absorbed the delicious hot black bean sauce. The char siew and red pepper provided not only flavour and crunch but also visually attractive. It's a really quick dish to make. However may need to plan in advance as the key ingredients of fresh rice noodle, char siew and black bean, are not typical pantry items.

INGREDIENTS
300 gm fresh rice noodles (marinate with 1 tbsp soya sauce)
150 gm char siew (thinly sliced)
1 red pepper (cut into chunks)
1/2 tbsp black beans (mashed)
1 clove garlic (minced)
2 fresh chilli ( sliced)
2 tbsp oil for frying
Seasoning:
1/2 salt
1 tbsp soya sauce
1/2 tsp sugar
lots of black pepper
METHOD
1 Drizzle 1 tablespoon of soya sauce over the fresh noodles. Stir to ensure the noodles are coated.
2 Heat 1 tablespoon of oil and when hot, add marinated rice noodles. Let the rice noodles sear under high heat for a few minutes. Stir fry the rice noodles before removing to a plate.
3 In the same pan, add 1 tablespoon of oil. Add garlic, black bean and chilli mixture and fry till fragrant.
4 Add char siew and red pepper and stir fry for a while.
5 Add 1 cup of water and simmer the mixture for a couple of minutes.
6 Season the sauce by adding salt, sugar, soya sauce and black pepper. Add more water to ensure there is about 1 cup of sauce.
7 Add fried rice noodles and stir fry to ensure the rice noodles are fully coated with the black bean sauce. Serve immediately. Yummy!
