Prawn Toast

Prawn Toast is a popular dim sum dish. It is however a little oily for my liking as the bread is deep fried in oil. If like me, you prefer to have a healthier version, try pan frying the bread lightly in a little butter. I like the tasty tender prawn meat that go so well with egg, butter & lightly toasted bread. So easy to make. If however you prefer a crispier version, dip a spoonful of prawn mixture in beaten egg and then roll it in cubes of bread. Then deep fry in oil till golden. This way the bread cubes are very crispy and seem less oily as the prawn mixture, being smaller in quantity, probably took less time to cook (in the oil).

Ingredients

  • 2-3 eggs (beaten)

  • 1 tsp salt

  • a dash of white pepper

  • 2 slices of wholemeal bread (cut bread into small cubes only if you prefer the crispier version)

  • 8-10 green prawns (shell, de-vein and chop finely)

  • 1 tsp of salt

  • 1/2 tsp cooking wine

  • Dash of black pepper

Method

1. Add 1 tsp salt and a dash of white pepper to the beaten egg. Set aside.

2. Chop up 8-10 green prawns finely.

3. To the minced prawn, add 1 tsp of salt, a dash of black pepper and 1/2 tsp cooking wine. Stir to mix well.

4. Butter a couple of wholemeal bread slices.

5. Spread a thick layer of prawn mixture onto the bread.

6. Dip the bread into the egg mixture, on both sides.

7. Spread a layer of butter onto a hot pan.

8. Place the bread with the prawn mixture facing down onto the pan.

9. Let the prawn mixture cook for a couple of minutes before flipping the bread over to the other side.

10. Flip the bread back to the other side and cook till the prawn mixture turn golden brown. 

Crispy Version

  • Cut the bread into 1 cm cubes.

  • Dip a spoonful of prawn mixture into the egg mixture.

  • Roll the prawn mixture in the bread cubes.

  • Deep fry till golden.
