Cream Puff
Cream puff is one of my childhood favourites. I enjoy biting into the slightly salty and chewy choux pastry and then the sweet custard like cream.
PUFF
Ingredients
60 gm butter
Pinch of salt
½ cup water
½ cup flour
3 eggs
Method
1. Boil butter, salt & water for a couple of minutes.
2. Turn off heat and add flour. Stir to combine till the dough leave the side of the bowl.
3. Turn heat on and cook the dough till a thin film develop at the base of the saucepan.
4. Remove to a mixing bowl and add eggs, one at a time and beat till combined.
5. Put dough in a pastry bag and pipe small mounds on a baking sheet.6. Bake in a pre-heated oven (200C) for 30 minutes.
CREAM FILLING
Ingredients
2 egg yolks
50 gm sugar
1 tablespoon flour
1 tablespoon cornflour
1 tablespoon butter
200 ml milk
1/2 teaspoon vanilla essence
1 tablespoon rum
Icing sugar
Method
1. Beat sugar and egg yolks till light and fluffy.
2. Sieve flour and cornflour into the mixture and stir to combine.
3. Add milk and vanilla essence to the egg mixture. Pour mixture through a sieve into a saucepan and bring to boil.
4. Stir constantly until the mixture thickens.
5. Remove from heat, stir in butter and rum.
6. Make slits in the puff and fill with cream.
7. Dust with icing sugar.
