Fried Juicy Pork Chop

Fried juicy pork chop is an easy and delicious dish to cook.  I use the brining method to ensure the pork chop is juicy. flavoursome and succulent. Brining will help increase the moisture content of the meat yielding moist and juicy meat when it is cooked.Choose pork chop that is about 3/4 inch thick. Dissolve 2 tablespoons of salt in 2 cups of water. Submerge the pork chop in the brine solution for at least 30 minutes. I find 30 minutes quite sufficient to ensure a tender & juicy pork chop. Do not brine for more than 2 hours. You could add spices to the brine solution but I find simple salt and black pepper seasoning just before frying pretty sufficient for a tasty pork chop.

INGREDIENTS

  • 2 x 200-250 gm pork chops

  • 2 tablespoons salt

  • 2 cups of water

  • Salt & black pepper for seasoning

  • 1 tablespoon of Canola oil

METHOD

1. Dissolve salt in a bit of hot water. Once salt is dissolved, add the remaining water (cold) to bring to 2 cups of brine solution. Ensure the brine is cool before proceeding to brine the pork chops.

2. Submerge the pork chops in the brine solution and leave it for at least 30 minutes.

3. Remove pork chops and discard brine solution. Pat pork chops dry with kitchen towels. Season with salt and black pepper.

4. Add 1 tablespoon of oil to a hot pan (preferably cast iron pan).

5. When smoking hot, add the pork chops and let it fry until golden brown (about 2-3 minutes). Flip it over and fry the other side till golden brown. Do not overcook.

6. Remove to a serving dish and let it rest for 5 minutes.

7. Stir the juice collected at the bottom of the pan scraping down the sides of the pan and pour over the pork chops.
