Seafood Stir-fry with Garlic and Sambal Chilli
In Australia, one very convenient way to have a quick and nutritious meal is to purchase a mixed seafood pack from the local farmers' market. The pack usually contains pieces of fresh salmon, white fish such as snapper, prawns, scallops and calamari rings, all cleaned and ready for use. Chop up some green beans, tomatoes and red pepper and stir fry the lot with garlic and sambal chilli. Dinner is served in less than 15 mins.
INGREDIENTS (serves 2)
Fresh mixed seafood pack (prawns, scallops, calamari rings, salmon and white fish)
1 teaspoon salt
1 tablespoon oil
1 clove garlic (minced)
1 tablespoon of sambal chilli
1 tomato (diced)
1/2 red pepper (diced)
8 green beans (cut into the same size as tomato and red pepper)
1 tablespoon tiny dried prawns (see picture)
1 tablespoon oyster sauce
2 tablespoons water
1 teaspoon fried onions
Dash of black pepper
METHOD
1. Season the seafood with a teaspoon of salt and black pepper.
2. Heat up the oil and fry the garlic until fragrant. Add prawns and calamari rings and fry till prawns are pink.
3. Add dried prawns, green beans, tomato and red pepper and stir fry for 5 minutes.
4. Add sambal chilli, oyster sauce and 2 tablespoonful of water and continue to stir fry for a couple more minutes.
5. Lastly add salmon, white fish and scallops and stir fry for another couple of minutes or so, till the fish is cooked.
6. Add fried onions and black pepper and remove to a dish. Serve with steamed rice.
