MINCED PORK WITH POTATO AND TOMATO

This is a simple dish but very tasty. I usually cook this dish whenever I run out of ideas as to what to cook. Requires only 3 ingredients.

INGREDIENTS

200 gm minced pork (a veal and pork mix is extra delicious)

1 large potato (cut into cubes)

5 - 6 cherry tomatoes (halved)

Marinade:

  • 1 tsp salt

  • 1 tsp sugar

  • 1 tsp sesame oil

  • Lots of black pepper

  • 1 Tbsp cornflour

METHOD

  1. Marinate the pork mince with salt, sugar, sesame oil and lots of black pepper. Add cornflour and mix well.

  2. Hear 1 Tbsp of oil in a pan. Add the potatoes and fry until golden.

  3. Remove the potatoes and add the minced pork. Fry the pork until brown.

  4. Add the potatoes and fry until golden. Remove to a bowl.

  5. Add minced pork and fry until brown.

  6. Add potatoes back to the pan. Stir fry the minced pork and potatoes together for a couple of minutes.

  7. Add 1 tablespoon of dark soy sauce and stir.

  8. Stir in 1 cup of water. Cover and cook for 5 minutes.

  9. Add cherry tomatoes and stir together.

  10. Cover again for a couple of minutes.

  11. Fry until the sauce is slightly thicken.
