Steamed Fish in Black Bean Sauce

We love fish, especially white fish. Our favourite fish is the Queensland snapper. The flesh is firm and has a delicate sweet flavour. We managed to get some super fresh snapper this week at the Farmers' Market and decided to steam it with black bean. Steaming it will create a natural delicious sauce, that blends well with the clear sweet flavour of fish. Steamed Fish in Black Bean Sauce is a quick, easy and delicious dish to prepare; just make sure the fish is fresh. The sauce is delicious - sweet, salty and hot.

INGREDIENTS

  •  300 gm fresh  snapper fillet (or any white fish)

  • Sauce mixture (stir together)

    • 1 tablespoon salted black bean (mashed)

    • 1/4 teaspoon sugar

    • 1 teaspoon light soy sauce

    • 1/2 teaspoon sesame oil

    • Dash of white pepper

    • 1 tablespoon water

    • 1 thumb nail size ginger (finely shredded)

    • 1 fresh chilli (finely sliced)

  • 1 tablespoon cooked oil (infused with garlic & ginger)

METHOD

1. Prepare the sauce mixture. Pour sauce mixture over the fish.

2. Put into a steamer and steam for 8-10 minutes or until cooked. Halfway through the steaming, drizzle 1 tablespoon of cooked oil that has been infused with ginger & garlic. 

3. Fish is cooked when it turns fully opaque. Do not overcook.It's so simple!
