Grilled Lamb Cutlet

One of the easiest meat dish to prepare is grilled lamb cutlet...and oh so very flavoursome and tasty....especially the meat near the bone and the bits of grilled crispy fat...yummmmo! Look for extra lean lamb cutlets and trim off any excess fat. Watching my cholesterol level means I can't have this as often as I would like. But I reckon once a month should be okay.  Besides, putting the meat on a rack will help grill off any remaining fat.  Here's the very simple recipe for the yummiest lamb dish.

INGREDIENTS (2 serves)

  • 6 lean lamb cutlets (trim off excess fat)

  • 1 teaspoon salt

  • Dash of black pepper

  • Mint sauce to serve

  • 2 tomatoes (sliced)

  • 1/2 teaspoon Canola oil

  • 1/2 cucumber (sliced)

  • Basil for garnish

METHOD

1. Remove lamb cutlets from the fridge an hour before cooking - to bring to room temperature.

2. Season the lamb cutlets and tomato slices with salt and black pepper for a few minutes.

3. Place seasoned lamb cutlets and tomato slices on a rack above a grill pan. Brush with a little oil.

4. Put under the grill for 3 minutes.  Turn lamb cutlet over and grill for another 3 minutes till lamb cutlet turn golden brown.

5. Sprinkle some chopped basil on the lamb cutlets.  Serve with mint sauce or mint jelly and cucumber. Enjoy!
