Sambal Seafood with Basil

It's Wednesday today - Farmers' Market day - when I get my supply of fresh seafood.  I love seafood - it's easy to cook, full of omega-3 fatty acid goodness, low in fat, high in protein and oh so tasty.  I could eat it everyday ... if only the Farmers' Market comes to the city everyday.Seafood is so versatile in cooking methods; you can stir-fry, bake, grill, steam, or deep fry. Today, I decided to stir-fry my seafood with sambal chilli and basil. Sambal seafood is moderately spicy and very yummy.

INGREDIENTS

  • 1 pack of fresh seafood mix (prawns, calamari, salmon, white fish, scallops)

  • 1 teaspoon salt

  • Dash of black pepper

  • 1 tablespoon cornflour

  • 1 tablespoon oil

  • 2 cloves garlic (sliced)

  • 1 tablespoon sambal chilli (I use Glory Sambal Chilli - onions, prawn paste, salt, sugar & oil)

  • 1/2 cup water

  • 1 teaspoon sugar

  • 10 basil leaves

METHOD

1. Season seafood with salt and black pepper for a few minutes.  Coat seasoned seafood with a bit of cornflour.

2. Add oil to the pan and fry garlic slices till golden.  Remove.

3. Turn up the heat, add prawns and calamari and fry till light brown.  Add salmon, white fish and scallops and continue to fry till cooked.  Remove seafood to a dish.

4. Lower the heat and add sambal chilli to the pan and fry till oil separates.  Add water and simmer for a couple of minutes. Taste the sambal and add sugar to taste.

5. Add the seafood, fried garlic slices and basil leaves and stir-fry to ensure seafood is well coated with sambal.

6. Remove seafood to a serving dish.  Mix a teaspoon of cornflour in a tablespoon of water and add to the sambal to thicken it slightly.  Pour sambal over seafood.
